Sunday was a rest day and we set off to explore the island

Beautiful sunshine one minute and then in rolled the clouds and it was time to go

The complicated process required fermenting the cocao beans and then grinding them for days in the red machine in the background.
Eventually three days later the final process, the chocolate is extruded into the plastic cases below.

There was the occasional bottle of red wine to complement the fare
Gerry "ulu" Bennet points out the finer points of breadfruit cuisine to an attentive head chef and Karl was always on hand to taste test
